Wierzynek's Soup

Cold nights in late December leave me mentally sifting through soup recipes. After tortellini soup on Saturday I found myself reminiscing about our dinner at Wierzynek on the market square in Crakow, Poland.

Wierzynek is a 700 year old restaurant with an incredible history. We sat in the middle of the "column" room last year and had a wonderful soup that I've endeavored to find the recipe for.

A quick internet search left me a bit puzzled for none of the Polish soup recipes sounded quite like the one I enjoyed. The closest one thus far is not Polish, but Romanian. It's called Ciorba de Varza. The sour soup recipes listed at this Tasting Poland site also may be worth experimenting with. They all sound good and clearly worth a try.
